Chocolate Fudge Brownies with Sea Salt

Nothing satisfies a sweets craving quite like a fudgy, chocolate brownie. These Chocolate Fudge Brownies are full of rich chocolate flavor and ooey gooey, fudgy texture. Plus, no mixer required!

These quick and easy brownies require just a few simple steps to make the brownies of your dreams. I would say I’m exaggerating but just wait until you try them!

To make the brownies, start by creating your flax eggs. You’ll want to grab a small cereal size bowl and add your flaxseed meal and almond milk. Stir to combine and then set aside. If you don’t have flaxseed meal or can’t find it in your local grocery store, no worries. You can create it yourself by using whole flaxseeds. Simply measure out the 3 heaping tablespoons plus I like to add 1 extra for safe measures into a food processor and pulse on the “pure” setting until finely grinded. It’s ok if there are still some bigger pieces in the mix, just be sure to re-measure when you place it in your cereal bowl to make sure you’re still only adding the 3 tablespoons the recipe calls for. 

Next using a medium bowl, combine your butter and sugar using a wooden spoon. I suggest softening the butter in the microwave for about 10 seconds before adding. This will make it easier to mix as well as create a more even consistency for mixing. Just be careful not to completely melt your butter. If this happens, pop it back in the refrigerator to re-harden before adding back into the bowl.

Then add your flax eggs and vanilla. Stir until combined. Next add the flour and cocoa powder, along with the baking powder and salt. The batter will look pretty dry at first. Keep stirring until it becomes a thick, wet mixture. It should be thick but not too thick to pour into the pan and easily spread. If you put some on your spoon it should still pour off when lifted up from the bowl, vs. like a cookie dough that stays with the spoon.

Once the batter is completely mixed, you can pour it into your baking pan. Using the spoon, push the batter to the sides and edges to make sure it is evenly in the pan. Lastly pop it into the oven and set a timer for 28 minutes. I ended up baking mine for 30 but every oven is different so I always suggest starting on the lower end and then you can always add time if needed. Bake until a toothpick or knife is inserted and comes out completely clean with no raw batter on it.

Remove pan from oven. Let cool and top with sea salt flakes!

Chocolate Fudge Brownies with Sea Salt

Ingredients:

  • 1/2 cup non-dairy butter (softened)

  • 2/3 cups cane sugar

  • 2/3 cups brown sugar

  • 3 flax eggs (3 heaping tablespoons flaxseed meal + ½ cup almond milk)

  • 1 tbsp + 1 tsp vanilla extract

  • 1 cup all purpose flour 

  • 3/4 cup unsweetened cocoa powder 

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • Sea salt flakes (optional)

Instructions:

  1. Preheat oven to 350 degrees F. Line an 8 x 8 baking dish with parchment paper or lightly grease with oil.

  2. In a small bowl, combine 3 heaped tablespoons flaxseed meal (you can make this by grinding whole flaxseeds in a food processor until it becomes a gritty flour texture) with 1/2 cup almond milk. Let rest for 20 minutes to thicken.

  3. In a medium size mixing bowl, add the butter and sugar, using a wooden spoon mix until well combined. Add in the flax eggs and vanilla, mix again. Add in the flour, cocoa powder, baking powder and salt, mix until batter is thick and no flour or cocoa powder chunks remain.

  4. Pour brownie batter into the center of the prepared baking dish. Spread to the corners and edges as needed. 

  5. Place in the center of the oven and bake for 28-33 minutes.

  6. Remove from oven and let cool on a wire rack for 20-30 mins. Once cooled, sprinkle sea salt flakes over top of brownies before cutting. Lift brownies from pan, cut and enjoy!
