Spicy Thai Sweet Potato and Black Bean Tacos

Taco Tuesday is everyone’s favorite day of the week. I think it’s safe to say that no matter who you ask, tacos are always a great idea. The wonderful thing about tacos is that you can incorporate any flavors you want into them. This recipe idea came from my love of easy recipes, tacos and all things spicy. It’s a simple recipe so even beginner cooks can whip these up in the kitchen in no time.

Spicy Thai sweet potato and black bean tacos is an unexpected twist on a traditional favorite. There is so much flavor packed into every bite. It’s truly unbelievable that something with so few ingredients can wow your tastebuds. With only three ingredients and some seasonings on hand, you can make a dish everyone will love. The peanut sauce is super simple to make too. You can adjust the heat of the dish to your liking with a few simple adjustments. This vegan recipe for spicy Thai tacos will literally open up a whole new world of taco possibilities.

For a bit of added texture, depth, and even more flavor you can add meat alternatives like extra-firm tofu or mushrooms. Toss them in when cooking your sweet potatoes or cook them separately as usual and add them into your tortilla shells.

Spicy Thai Sweet Potato and Black Bean Tacos

Taco Ingredients

  • 2 large sweet potatoes, peeled and cubed

  • 1 cup or 1 can black beans

  • 1 tbsp sesame oil

  • 2 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tbsp cumin

  • 2 tsp chili powder

  • 2 tsp cayenne pepper

  • 1 tsp ginger powder

  • ½ tsp crushed red pepper

  • Salt

  • Pepper

  • Tortilla shells

Spicy Thai Peanut Sauce Ingredients

  • ⅓ cup peanut butter

  • 1 tbsp tamari

  • 2 tsp garlic powder

  • 1 tbsp agave

  • 2 tbsp lime juice

  • 1 tsp crushed red pepper

  • ¼ cup water

Instructions

  1. Roast your sweet potatoes for 30 minutes at 400 degrees.

  2. In a saucepan, cook your black beans according to package instructions. Do not overcook.

  3. In a frying pan, combine the sweet potatoes and black beans in 1 tbsp of sesame oil.

  4. Season the ingredients and stir gently.

  5. Once all the ingredients are combined, remove from the stove.

  6. In a mixing bowl, combine ingredients for spicy peanut sauce. Mix well.

  7. Heat your tortillas.

  8. Add the sweet potatoes, black beans and peanut sauce to each tortilla.

  9. Serve and enjoy!
